Maybe you’ve been on the fish journey with us for a while or maybe you’re thinking of jumping in to begin but either way winter brings us some delicious new options and varieties that are often overlooked but which are just as good as their better known friends from the deep blue sea.
Everyone is familiar with the mighty flathead, the much celebrated barramundi or the iconic snapper and with good reason, these legends of the deep are incredible fish bursting with flavour. What many don’t realise is that there literally are ‘plenty more fish in the sea’, by that we mean there are heaps and heaps of other locally caught species that are just as impressive but at a much more affordable price.
The first of our unsung heroes is the humble gurnard. Gurnard are found prolifically along the Victorian coastline and have been long considered by many seafood fans as next best to the mighty flathead. Boneless gurnard fillets are typically firm with a sweet mild flavour. Like flathead, gurnard can be crumbed, fried, steamed, battered or baked! A great allrounder for the family any day of the week or an interesting choice for those fish fans looking for something a bit different.
The second of our winter wonders is the long eel like Ling which are also found year round along the Victorian coastline. Generally found at deeper depths, ling feast upon squid and other small fish found in the deep blue. Their firm brilliant white flesh has been compared to the famous Atlantic cod. Ideal for crumbing and lightly frying the skinless, boneless fillets are ideal for a speedy mid-week fish burger served with aioli and lettuce.
