Yarra Valley Caviar is a boutique fresh water salmon farm located at the base of the pristine Rubicon River in the Yarra Valley region of rural Victoria. From humble beginnings the multi award winning Yarra Valley Caviar is now highly sought after by the best chefs and on menus at many of Australia’s finest restaurants.
Yarra Valley Caviar is the only dedicated Australian producer of fresh water Atlantic Salmon and a staunch believer in the humane treatment of its fish, taking a completely natural approach to its fish rearing and roe harvesting.
Each year at the end of Autumn, the large resident salmon are carefully sedated using a completely natural anaesthetic of clove oil. The team of dedicated milkers from across Australia and even overseas brave the subzero temperatures and freezing cold water to gently milk each individual fish for their valuable roe entirely by hand. Once their valuable roe has been extracted the fish are slowly recovered in specialised tanks and then returned to the ponds until the next year.
The milking process
Unlike other large salmon farms the fish are kept in low densities which reduces the incidence of disease and stress. Following strict UK soil association guidelines for organic aquaculture, the farm has banned the use of any antibiotics or chemicals, and its roe is cleaned and packaged on site, without the use of any additives. The result is a superb quality roe which is salted with premium sea salt flakes to produce bright, plump and flawless caviar - bursting with flavour.
